Storage Temperature and Grain Moisture Effects on Market and End Use Properties of Red Lentil

Storing lentil is a strategy used by growers to manage price volatility. However, studies investigating the impact of storage conditions on market and end use properties are limited. This study examined effects temperature (4, 15, 25, 35 °C) grain moisture (10 14%, w/w) traits related (seed coat colour), viability (germination capacity), (hydration capacity, milling efficiency, cooking quality) in four red cultivars (PBA Bolt, PBA Hallmark, Hurricane, Jumbo2) over 360 days. at 14% content °C significantly (p = 0.05) darkened seed after 30 days, caused complete loss within 180 days reduced quality (cooked firmness) 120 across all tested cultivars. 10% hydration capacity efficiency tested. Jumbo2 exhibited higher rate degradation quality, lower other studied. ≤15 prevented traits. These findings will support improved protocols maintain improve economic outcomes for pulse industry.
